LOCAL CHEESE…HAND CRAFTED, LIMITED PRODUCTION

We are a San Luis Obispo artisanal cheese company and our cheese is made in small batches from the whole milk of a single-herd of Holstein and Jersey cows. With roughly 4.3% milk fat, our cheese is hand-crafted with several cultures including a unique culture that is directly imported from Europe for our use.

Our proprietary cheese is made in 5 lb. Tomme wheels and was inspired by Allgäuer Bergkäse (mountain cheese) from the foothills of the Swiss Alps where our cheese maker Christoph originated from and gained an appreciation of the old-world traditions of artisan foods.
